3 Simple and Speedy Breakfasts

CHARLOTTE DAY PROVIDES US WITH SOME BREKKY INSPIRATION.

The first few months of the year are always a little depressing: the festivities of Christmas and New Year are a distant memory, the days are grey and short and the deadlines are never ending. Now exam season is looming ever closer, most of us are pretty strapped for time, too.

To set you up for the day (and stop you from getting hangry) here are 3 super-quick, super-easy and healthy breakfast ideas to brighten up those miserable winter mornings. They all take less than 10 minutes to prepare, are full of goodness and are mega cheap (you’ll probably have the majority of ingredients in your kitchen already!).


BANANA AND CHOCOLATE OVERNIGHT OATS

Mash 1 small banana in a bowl with a fork, then add 200ml of any milk of your choice (skimmed or unsweetened almond milk are good options if you’re trying to keep it healthy). Next add 50g of porridge oats and 1 tbsp of cocoa powder, then stir thoroughly. Pour the contents into a air-tight container and leave in the fridge for at least 8 hours. In the morning, pour the overnight oats into a bowl and add any toppings you fancy, I went for raspberries and a few shavings of dark chocolate.


GREEK YOGHURT AND GRANOLA BOWL

Spoon a few tablespoons of greek yoghurt into a bowl. Sprinkle a generous portion of granola of your choice on top, then add any fresh fruit you enjoy. Squeeze a little honey on top to finish.


SMASHED AVOCADO AND CHILLI FLAKES ON RYE BREAD

Take a small, ripe avocado and spoon out the contents – then mash it up with a fork in a small bowl. Add a pinch of salt, black pepper and a squeeze of lemon juice. Toast a slice of rye bread. Spread the smashed avocado over the toast, sprinkling a few chilli flakes on top to finish.
